Dinner doesn’t always have to be meat and potatoes. Here is a busy-day option that is easy and delicious. One 13oz can chicken deli mustard softened butter (optional) swiss cheese slices lettuce caramelized onions – (recipe follows) Large Sandwich Rolls – (any kind you like) Cook caramelized onions. Assemble sandwiches by putting butter on one half of the roll and then spread mustard on the other half. Place swiss cheese slice and chicken on bun and toast if desired. When toasted, add onions and lettuce. Serve hot with your favorite chips or fries. Note: (One 13oz can of chicken will make approximately 4 sandwiches.) Caramelized Onions 1 Tablespoon Canola or Olive Oil 4 medium sized onions pinch of salt 2 Tablespoons Balsamic Vinegar 1 teaspoon sugar Peel and slice onions. This is a classic dish that I see almost every time I go out to eat. I wanted to be able to eat this wonderful soup at home as well so I threw on my apron and came up with this recipe. This soup is great as a side dish with sandwiches or can be served as a main dish. 5 Tablespoons butter 1 Tablespoon olive oil 1 small onion chopped 1/3 cup flour 1 cup milk 1 cup of half and half (feel free to us the fat-free version) 2 cups of chicken broth (low sodium) or Vegetable broth 1/2 teaspoon garlic powder 3 cups cooked and chopped broccoli 3 cups cheddar cheese salt and pepper to taste In a dutch oven or stew pot melt butter. Add olive oil and chopped onion. Cook over medium heat until onion is translucent. Using a whisk, stir in flour and cook for 2 minutes longer. Whisk in milk, half and half and chicken broth. There are so many varieties of recipes out there for baked beans. This is the one that i grew up with. The hamburger makes it wonderful. This recipe is easy to make and your family will love it too. 1 lb ground beef 1 28 oz (1 lb) can of pork & beans 1 med onion 1/4 cup packed brown sugar 1 Tablespoon yellow mustard Cook ground beef in skillet until no longer pink. Drain off excess fat and pour into 2 quart casserole dish. In the same skillet, saute onions in one Tablespoon oil until translucent. This recipe is a staple in our house and the whole family loves it. Simple, quick, and delicious is really hard to beat. It helps that this is a main course that is easy on your wallet too. 2 pounds lean ground beef (i use ground chuck or sirloin) 1 onion (chopped) 1 egg 1/2 cup plain bread crumbs (home made is best) 1 Tablespoon Worcestershire sauce 1/2 teaspoon salt 1/2 teaspoon pepper Place meat in a large bowl. Chop onion and add to meat. Add remaining ingredients. The only way to mix this is to take off your rings and dive right in! Mash and mix it until ingredients are just combined. Do not mix too long or steaks will be tough. Shape mixture into patties and place on broiler pan. Bake in oven on 350 degrees for 15 minutes. Turn oven to broil and finish cooking (watching them closely) until desired level of cooking has been achieved. I like mine cooked well. Cake mixes make the best cookies! These soft cookies have wonderful flavor of vanilla and chocolate. Place left overs in air tight container. The best thing about these cookies is that they are very easy to make and budget friendly. 1 Vanilla Cake Mix 1/3 cup canola or vegetable oil 2 Large eggs – slightly beaten 1 Tablespoon water 1 whole vanilla bean 1/2 cup mini chocolate chips Sugar Place first 4 ingredients in mixing bowl. Slice vanilla bean down the center and scrap out seeds and add to mixture. Mix until just blended. Fold in chocolate chips. Roll dough into 2 inch balls and roll in sugar. Bake on lightly greased baking sheet in 350 degree oven for 10 minutes or until lightly browned. Remove from oven. Using a spatula transfer cookies to cooling rack and cool completely. ~Marsha...
