Peaches are a prominent part of the south. This Peach Cake is moist and delicious. I used frozen sliced peaches and the flavor was incredible! 1 package sliced frozen peaches (thawed) 2/3 cup sugar 3 cups all purpose flour 1 teaspoon salt 1 teaspoon soda 2 cups sugar 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1 cup sour cream 1 teaspoon vanilla butter (melted) 2 Tablespoons milk Chop peaches into bite sized pieces. In a medium saucepan combine peaches and 2/3 cup sugar. Cook over medium heat for 10 minutes until peaches are hot and syrup has thickened slightly. Remove from heat and drain peaches (make sure you reserve this peach flavored syrup for the cake’s glaze). Set peaches and syrup aside to cool. In a large bowl combine flour, salt, soda, sugar, cinnamon, and nutmeg. In a mixing bowl beat eggs, add sour cream, vanilla, melted butter and milk and stir until combined. Make a well in the dry ingredients and add egg mixture and stir until ingredients are incorporated. Fold in peaches. Pour batter into a greased and floured bunt pan and bake for 1 hour at 350 degrees or until pick poked in the center of cake comes out clean. Glaze: Combine peach syrup with enough confectioner’s sugar to make a thin glaze. Drizzle over top of warm cake. ~Marsha...

This recipe is a staple in our house and the whole family loves it. Simple, quick, and delicious is really hard to beat. It helps that this is a main course that is easy on your wallet too. 2 pounds lean ground beef (i use ground chuck or sirloin) 1 onion (chopped) 1 egg 1/2 cup plain bread crumbs (home made is best) 1 Tablespoon Worcestershire sauce 1/2 teaspoon salt 1/2 teaspoon pepper Place meat in a large bowl. Chop onion and add to meat. Add remaining ingredients. The only way to mix this is to take off your rings and dive right in! Mash and mix it until ingredients are just combined. Do not mix too long or steaks will be tough. Shape mixture into patties and place on broiler pan. Bake in oven on 350 degrees for 15 minutes. Turn oven to broil and finish cooking (watching them closely) until desired level of cooking has been achieved. I like mine cooked well. Serve with additional Worcestershire sauce or your favorite sauce. Gravy makes a nice accompaniment too. ~Marsha...

Some of the best foods are simple ones. These hors d’oeuvres are simple, elegant and delicious! Try serving these at your next party. 1 package whole pitted dates 1 package bacon (regular or maple flavor) Cook bacon until done. Working quickly while bacon is plyable wrap half a piece of bacon around each date. You can use decorative toothpicks to hold them in place if desired, but as bacon becomes crisp it will stay wrapped around the date. Place on a decorative dish and serve. *Note: I cook 2-3 pieces of bacon at a time in the microwave. I use a microwave bacon tray so the grease will drain away. By cooking just a few pieces at a time you can work with the bacon before it crisps up. ~Marsha...
