Mocha Frappé

There is nothing better than a cool refreshing drink on a hot summer day.  This Mocha Frappé really hits the spot.  It’s easy to make and absolutely delicious! 4 cups ice 1 2/3 cups milk 2 heaping Tablespoons hot fudge sundae sauce 1/4 cup chocolate syrup 3 or 4 Tablespoons premium instant coffee dissolved in 1/2 cup water 1/3 cup sugar Place all the above ingredients in a blender and blend until smooth.  Pour into glasses and top with whipped cream and a drizzle of chocolate syrup. Serves 4. *TIP* You can lighten up this drink a little by using skim milk.  If you do not drink caffeine, try using decaffeinated instant coffee. ~Marsha...
Chicken Manicotti with Ricotta Cheese

Chicken Manicotti with Ricotta Cheese

1 8oz package Manicotti shells 2 chicken breasts (boiled an cut shredded) 1 package (15 oz) Part skim Ricotta cheese 1 Tablespoon Italian Seasoning 1/4 cup milk 1/2 cup parmesan cheese 1 large egg 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1 teaspoon salt Spray 13 x 9 inch baking dish with cooking spray. I boil my chicken in salted water while the Manicotti is cooking.   Cook Manicotti  according to package directions for 6-8 minutes, leaving it a bit undercooked. (it will cook further in the oven)  Drain noodles and set aside to cool.  Dice or shred chicken.  In a medium bowl, stir together the remaining ingredients until thoroughly combined.  Stir in chicken.  Stuff shells with a teaspoon at a time of the chicken mixture.  Place in baking dish and cover with your choice of alfredo sauce or marinara sauce.  Bake for 25 – 30 minutes or until heated through. ~Marsha...

Roasted Red Potatoes with Onion

6 Medium red potatoes 1 large onion chopped 1/4 teaspoon onion powder 1/4 teaspoon garlic powder 1 teaspoon chili powder salt & pepper to taste olive oil Wash and scrub potatoes well.  Cut potatoes in half, cut each half in to thirds and place on large baking sheet.  Chop onion and add to potatoes.  Sprinkle spices over potatoes and drizzle with olive oil.  Mix with your hands until well combined.  Bake uncovered in a 350 degree oven approximately 25 min. or until fork tender. ~Marsha...
Salmon Patties

Salmon Patties

My family loves these tasty salmon patties.  They go well with most any side dish.  The best part is they are so quick and easy to make! 2 – cans (7oz each) boneless skinless salmon, drained (feel free to use freshly baked or grilled salmon as well) 1 egg 1/4 cup corn meal 1/4 cup self rising flour 2 Tablespoons finely chopped onion 3 Tablespoons grated carrot 1/2 teaspoon salt 1/2 teaspoon pepper 1 1/2 teaspoon dried dill weed 1 teaspoon celery seed Directions: In a a large bowl combine all ingredients.   I usually mix it with my hands like you would meatloaf.  Shape into 3-4 inch patties.  Fry in a skillet with 1/2 cup oil (vegetable, Canola or olive oil).  Cook over medium heat until browned on both sides.  Place on a plate with paper towels, serve hot.  Makes 8 patties. ~Marsha...

Sweetheart Cookies

These cookies are good for any occasion.  All you have to do is change cookie cutters.  They are made from simple ingredients that I always keep on hand.  They have a softer texture and a wonderful flavor.  The dough is a dream to work with! Ingredients 2 cups sugar 1/2 cup butter (at room temperature) 1/2 cup shortening (at room temperature) 1/2 cup buttermilk 3 eggs slightly beaten 1/2 teaspoon soda 1/2 teaspoon salt 2 teaspoons baking powder 1 teaspoons vanilla 5-6 cups plain flour (enough to form a soft dough) Directions: Preheat oven to 350 degrees F.  Cream together the shortening, butter and sugar.  Add eggs and vanilla  mix to combine.  In a large bowl, sift 3 cups flour along with soda, salt, and baking powder. Slowly add flour to sugar mixture and 2-3 cups more sifted flour or enough to make a soft dough.  Turn dough out onto floured surface and knead briefly.  Roll dough to 1/4 inch and cut out cookies with festive cookie cutters.  Bake for 10-12 minutes To decorate with sprinkles:  Brush cut out cookies lightly with water and sprinkle with colored sugar or candies.  Bake as directed. To decorate with frosting: Bake cookies as directed and cool completely on cooling rack.  Frost with the following soft frosting and sprinkle with candies or melted chocolate.
