Dinner doesn’t always have to be meat and potatoes. Here is a busy-day option that is easy and delicious. One 13oz can chicken deli mustard softened butter (optional) swiss cheese slices lettuce caramelized onions – (recipe follows) Large Sandwich Rolls – (any kind you like) Cook caramelized onions. Assemble sandwiches by putting butter on one half of the roll and then spread mustard on the other half. Place swiss cheese slice and chicken on bun and toast if desired. When toasted, add onions and lettuce. Serve hot with your favorite chips or fries. Note: (One 13oz can of chicken will make approximately 4 sandwiches.) Caramelized Onions 1 Tablespoon Canola or Olive Oil 4 medium sized onions pinch of salt 2 Tablespoons Balsamic Vinegar 1 teaspoon sugar Peel and slice onions. Add 1 Tablespoon olive oil to skillet over medium heat. Add onions and pinch of salt. Sauté until onions are wilted. This is a classic dish that I see almost every time I go out to eat. I wanted to be able to eat this wonderful soup at home as well so I threw on my apron and came up with this recipe. This soup is great as a side dish with sandwiches or can be served as a main dish. 5 Tablespoons butter 1 Tablespoon olive oil 1 small onion chopped 1/3 cup flour 1 cup milk 1 cup of half and half (feel free to us the fat-free version) 2 cups of chicken broth (low sodium) or Vegetable broth 1/2 teaspoon garlic powder 3 cups cooked and chopped broccoli 3 cups cheddar cheese salt and pepper to taste In a dutch oven or stew pot melt butter. Add olive oil and chopped onion. Cook over medium heat until onion is translucent. Using a whisk, stir in flour and cook for 2 minutes longer. Whisk in milk, half and half and chicken broth. This recipe is a staple in our house and the whole family loves it. Simple, quick, and delicious is really hard to beat. It helps that this is a main course that is easy on your wallet too. 2 pounds lean ground beef (i use ground chuck or sirloin) 1 onion (chopped) 1 egg 1/2 cup plain bread crumbs (home made is best) 1 Tablespoon Worcestershire sauce 1/2 teaspoon salt 1/2 teaspoon pepper Place meat in a large bowl. Chop onion and add to meat. Add remaining ingredients. The only way to mix this is to take off your rings and dive right in! Mash and mix it until ingredients are just combined. Do not mix too long or steaks will be tough. Shape mixture into patties and place on broiler pan. Bake in oven on 350 degrees for 15 minutes. Turn oven to broil and finish cooking (watching them closely) until desired level of cooking has been achieved. I like mine cooked well. Serve with additional Worcestershire sauce or your favorite sauce. Gravy makes a nice accompaniment too. ~Marsha...

This casserole has a rich elegant flavor. You can prepare this recipe and cool to room temperature, then freeze it to serve another time. This recipe makes a large casserole so it would be great to take to a “pot luck” dinner or family gathering. 1 package boxed long grain and wild rice (the kind with the flavor packet) cooked 1 medium onion 3 celery ribs 1 Tablespoon olive oil 2 cups instant whole grain brown rice* 2 cups chicken stock 1 Tablespoon chicken bouillon flavor granules 1 can cream of celery soup 1 can cream of mushroom soup 2 cups cooked cubed chicken Cook long grain and wild rice and place in a large casserole dish (13×9). Chop onion and celery and saute in 1 tablespoon of olive oil until tender. Stir in brown rice, chicken stock and chicken granules. Cook over medium heat until mixture begins to boil then pour into casserole dish with wild rice. Stir in soup and cooked chicken. This recipe is simple and good. The whole family will love it. 1/2 lb. mild sausage 4 medium potatoes 1 medium onion 1 large bell pepper 1 teaspoon salt 1/2 teaspoon pepper 2 tablespoons vegetable oil Cook sausage in skillet until no longer pink. Drain off fat. Add 2 Tablespoons oil to skillet (can us same skillet) and add potatoes, onions, salt and pepper. Cook for 5 minutes. I loved Shepard’s Pie as a child and now that i have grown up i have modified the ingredients to suit my more grown up tastes. The best part about this dish is that it is a one course meal. This recipe also makes a large pan so it would be great to make for guests! It takes a little assembly time but it is well worth your effort! Base 2 lbs ground sirloin (can substitute ground chuck) 1 large onion chopped 1 clove of garlic finely chopped 2 stalks celery chopped 3 carrots peeled and chopped 1 large zucchini chopped 1 tablespoon olive oil 1/2 teaspoon dried thyme 1 bay leaf 1 1/2 teaspoons red wine vinegar 1 Tablespoons sugar 1 can 14 1/2 oz. fire roasted or stewed chopped tomatoes 1 tablespoon flour Potato topping: 3 leeks 1 Tablespoon olive oil 1 clove of garlic (peeled and chopped) 6 to 8 yellow or red potatoes (not baking potatoes) 1 teaspoon kosher salt 1 Tablespoon butter 1 cup grated cheese 1 teaspoon dried parsley Base Directions: To save on messing up so many dishes, I like to use a pan that can go from stove top to oven .
