Oatmeal and honey make everything healthy. Who am I kidding, maybe that’s not entirely true, but these delicious cookies are just too hard to resist. While you’re enjoying the mouth-watering taste of these treats warm out of the oven, just repeat to yourself, “It has oatmeal and honey, so its good for me.”. Works for me! 1 cup sugar 1/2 cup shortening 1 egg 1/2 cup honey 1 teaspoon vanilla 2 cups plain flour 1 teaspoon salt 1 1/2 teaspoon baking soda 1 cup quick rolled oats 6 ounces chocolate chunks Directions: Cream sugar and shortening. Add egg and vanilla and mix until blended. In a seperate bowl, mix together the flour, salt, soda, and oats. Stir well to combine. Slowly mix in flour mixture to creamed mixture until just combined. Stir in chocolate chunks. To bake, drop by rounded teaspoons on light greased baking sheet. Bake for 15 minutes in a 350 degree oven. I know that people think that all foods in the south are fried. I will admit that I do love fried foods, but I do like to eat healthy and occasionally indulge in the naughty foods. These muffins are high in the “good for you” ingredients. This recipe proves that eating healthy can also be delicious! 1 cup all-purpose flour 1/2 cup whole wheat flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon baking powder 1 medium apple cut up into small pieces ( I used a Granny Smith Apples) 1/3 cup chopped dates 1 egg or 1/4 cup egg substitute 2 tablespoons canola oil 1/4 cup plus 2 tablespoons unsweetened apple sause 1/4 cup skim milk Crumb Topping: 2 tablespoons toasted wheat germ 1/4 cup packed brown sugar 1/8 teaspoon cinnamon or nutmeg 2 tablespoons cold butter 1/4 cup chopped nuts (I used walnuts) Mix together dry ingredients. In a separate bowl beat egg slightly. Add oil, apple sauce and milk. Pour into flour mixture and stir until just combined. Add apple pieces and dates and fold in. Lightly spray muffin pan or use paper liners and place mixture into muffin pan. For Topping, Mix wheat germ, brown sugar, cinnamon and stir to combine. Cut in cold butter until mixture looks like crumbs. add chopped nuts and spoon onto top of muffins. Bake in a 350 degree oven until done about 20 minutes. Remove muffins from pan and cool on a rack. Cake mixes make the best cookies! These soft cookies have wonderful flavor of vanilla and chocolate. Place left overs in air tight container. The best thing about these cookies is that they are very easy to make and budget friendly. 1 Vanilla Cake Mix 1/3 cup canola or vegetable oil 2 Large eggs – slightly beaten 1 Tablespoon water 1 whole vanilla bean 1/2 cup mini chocolate chips Sugar Place first 4 ingredients in mixing bowl. Slice vanilla bean down the center and scrap out seeds and add to mixture. Mix until just blended. Fold in chocolate chips. Roll dough into 2 inch balls and roll in sugar. Bake on lightly greased baking sheet in 350 degree oven for 10 minutes or until lightly browned. Remove from oven. Using a spatula transfer cookies to cooling rack and cool completely. ~Marsha...

These cookies will be a big hit with your family. Who doesn’t love chocolate? What I like most about them is that they are made from simple ingredients that I usually have on hand. Try them and see how fast they disappear at your house! 1 box chocolate cake mix 1/3 cup canola oil 2 large eggs 1 Tablespoon Water 1/2 cup semi-sweet chocolate chips sugar Preheat oven to 350 degrees. Combine first 4 ingredients and stir until just combined. Fold in chocolate chips. Measure each cookie by heaping teaspoons and roll into balls and then roll in sugar or confectioners sugar. Place on lightly greased baking sheet and bake at 350 degrees F for 10-12 minutes. Remove from oven and cool for 2 minutes on pan. This recipe belongs to my husband’s great grandmother. This cake has a soft texture and wonderful flavor. I frosted it with chocolate butter cream frosting, but it would also be good served plain with whipped topping and a sprinkle of cocoa powder. 2 cups sugar 1/2 cup cocoa 1 cup softened butter 1 cup hot water 2 cups plain flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup buttermilk 2 eggs 1 teaspoon vanilla 1 tablespoon instant coffee 2 tablespoons warm water Directions: In a mixing bowl combine sugar cocoa and butter. Cream together scraping down bowl at least once. Add 1 cup hot water and mix thoroughly. In a separate bowl sift together flour, soda and salt. Dissolve coffee in 2 Tablespoons warm water. Add flour to cake batter alternately with buttermilk. Pour in coffee mixture and vanilla. Beat until smooth. Bake in greased and floured round cake pans in 325 degree oven until done. There is nothing quite like the taste of a homemade pie! It takes a little bit of doing, but it is so worth all your efforts. This cherry pie tastes so much better than the ones you can buy in stores, and what’s great about it is I know exactly what’s in it! 5 cups fresh cherries 2/3 cup sugar 1/4 cup corn starch 1/4 teaspoon salt 1/2 teaspoon almond extract 1 1/4 cup water Double pie crust recipe Directions: Prepare pie crust recipe. Roll out and dough and place in a deep dish pie plate. Roll out second pie crust. You can make a lattice pie or a double crust pie, which ever you prefer. Wash, stem and pit cherries and cut in half if desired, place in a saucepan. Mix together sugar, salt, and corn starch, stir until combined. Pour sugar mixture over cherries then add water and almond flavoring. Heat stirring occasionally over medium heat until mixture comes to a boil, continue cooking until liquids have thickened. (2-3 minutes). Remove from heat and pour into unbaked pie shell. Top with remaining pie crust or cut strips to make a lattice pie shell. Loosely cover with aluminum foil or use baking ring to prevent the crust from burning. Bake in a 425 degree oven for 15 minutes.
