Are you looking for a lighter, refreshing desert? Try this watermelon sorbet. This frozen treat has tons of flavor without all the guilt. Healthy and tastes great, that combination doesn’t happen very often. I have one of the new “bowl” type ice cream makers, but you can use the older type too. Just be sure to put your ice cream makers bowl in the freezer the day before you make this recipe. Lets get this started by making a simple syrup. Mix water and sugar together in a saucepan and bring to a boil. Once the liquid has boiled, turn head down to medium and simmer, not long, just until all the sugar has completely dissolved. Place syrup in a jar and put it in the refrigerator to cool completely. Place watermelon chunks, salt, vanilla, and lemon/lime juice in a blender and pulse until smooth. If you all the watermelon will not fit in your blender, don’t worry, just fill the blender, pulse a few times then add the remaining melon. Add cold simple syrup to melon liquid and pour into your electric ice cream maker. Freeze mixture according to your manufacturers instructions, this usually takes about 20 minutes. This wonderful grain isn’t just for soup anymore! Barley has protein and potassium which makes this not only tasty but good for you. Try it, you may just be surprised how good it is! This not only is a great quick side dish, but with protein it could be a good change-of-pace main dish for you vegetarians. 2 scallions chopped – green and white part 1 Tablespoon olive oil 1 cup dried barley 1 can vegetable broth, Plus enough water to make 2 cups 1/4 teaspoon marjoram salt and pepper to taste In a non-stick skilled, add olive oil and chopped onion. Saute over medium heat for 2 minutes. Add dried barley and saute 2 more minutes. Add remaining ingredients and stir to combine. Reduce heat slightly and cover with lid to steam. Cook until most of the liquid is gone, roughly 10 minutes....

These muffins are great! Who says that things that are healthy have to taste bad? Try making a batch of these, your kids will love em! 1 cup plain flour 1/2 cup plain whole wheat flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/4 cup milled flax seed 2 cups really ripe bananas 1/2 cup sugar 2 Tablespoons Molasses 1 teaspoon vanilla 1/3 cup unsweetened applesauce 2 Tablespoons butter melted (I used “I can’t believe it’s not butter” sticks) Topping: 1/4 cup toasted wheat germ 3 Tablespoons brown sugar 2 Tablespoons finely chopped walnuts 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg 1 Tablespoon butter Directions: Preheat oven to 350 degrees. While oven is heating, prepare topping by mixing together the first 5 ingredients. Cut in 1 Tablespoon butter until it resembles small crumbs. Set aside. For muffins, in a large bowl, mix together the flour, whole wheat flour, flax seed, baking soda, baking powder and salt. Stir to combine. In a mixing bowl mix together the sugar, egg, banana, molasses, vanilla and applesauce. Stir wet ingredients into flour mixture by hand until just combined. Do not over mix or muffins will be chewy. Pour batter into muffin pan sprayed with cooking spray or lined with paper liners. Fill each space two thirds full. Top each muffin with the topping mixture and place in oven to bake. Bake for 15 -20 minutes or until toothpick inserted in the center of muffin comes out clean. Remove to wire rack to cool. ~Marsha...
