My family loves Asparagus and Quiche. Making a dish that combined the two was a no-brainer. This is a wonderful spring-time breakfast or brunch recipe that your family will appreciate. Just put this together and let it bake while you enjoy your first cup of coffee. If you’re a vegetarian just leave off the ham it is still delicious. 6 to 8 asparagus spears 1/2 bell pepper ( I used red a red one) small onion chopped 1 cup cooked ham – cubed 3 cups shredded swiss cheese 1 Tablespoon fresh or dried parsley 1 pint egg beaters or 8 eggs 1/4 cup milk salt and pepper to taste Wash asparagus and cook in a skillet of water for 3 minutes. Drain in colander. When cool enough to work with, chop asparagus into one inch pieces and place them in a large bowl. Add chopped bell pepper, onion, cubed ham, cheese and parsley. Add salt and pepper to taste. Stir with spoon until combined. Place in a 9-inch deep dish pie plate. Add eggs or egg beaters and milk to a bowl and beat until mixed. I modified this recipe from one that I found online to suit my family’s tastes. You can add nuts, raisins, or fruit to this if you like, but these muffins are very moist without anything added. They are delicious with homemade jams on top or plain. 2 cups toasted whole grain oat cereal, crushed about 1 cup crushed, (like Cheerios) The food processor makes fast work of the cereal or put cereal in a zip top bag and crush with rolling pin. 3/4 cup whole wheat flour 3/4 cup flour 1/2 cup firmly packed brown sugar 1 1/2 teaspoon cinnamon 1 teaspoon baking powder 3/4 teaspoon baking soda 1/4 cup ground flaxseed 1 cup applesauce 1/3 cup skim milk (I use light soymilk) 3 tbsp. vegetable oil 1 egg or (one egg white if you are watching your cholesterol) Heat oven to 400 degrees. Grease bottom of muffin pan or use papers. Mix dry ingredients in medium bowl. Stir in remaining ingredients just until moistened. Bake until golden brown, 18 to 22 minutes. 12 muffins. These muffins are great! Who says that things that are healthy have to taste bad? Try making a batch of these, your kids will love em! 1 cup plain flour 1/2 cup plain whole wheat flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/4 cup milled flax seed 2 cups really ripe bananas 1/2 cup sugar 2 Tablespoons Molasses 1 teaspoon vanilla 1/3 cup unsweetened applesauce 2 Tablespoons butter melted (I used “I can’t believe it’s not butter” sticks) Topping: 1/4 cup toasted wheat germ 3 Tablespoons brown sugar 2 Tablespoons finely chopped walnuts 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg 1 Tablespoon butter Directions: Preheat oven to 350 degrees. While oven is heating, prepare topping by mixing together the first 5 ingredients. Cut in 1 Tablespoon butter until it resembles small crumbs. Set aside. For muffins, in a large bowl, mix together the flour, whole wheat flour, flax seed, baking soda, baking powder and salt. Stir to combine. In a mixing bowl mix together the sugar, egg, banana, molasses, vanilla and applesauce. Stir wet ingredients into flour mixture by hand until just combined. Do not over mix or muffins will be chewy. Pour batter into muffin pan sprayed with cooking spray or lined with paper liners. Fill each space two thirds full. Top each muffin with the topping mixture and place in oven to bake. These pancakes have great flavor. My husband raved about them and has made me promise to make them again soon. They go great as a side dish with any meal, not just breakfast. You can use them like bread and make sandwiches out of them. 1 egg 2 Tablespoons butter (melted) 1 1/2 cups milk 2 cups self-rising flour 1 cup sour cream (i used the lite sour cream) 2 Tablespoons dried chives Cooking spray In a medium mixing bowl, beat egg lightly. Mix in melted butter and milk. Stir in sour cream and whisk until smooth. Stir in flour and chive and stir until just combined. Spray frying pan and preheat. This basic pancake mixture has a wonderful taste. Check this site for other “flavored” pancakes. 1 egg slightly beaten 2 Tablespoons butter -melted 1 1/2 cups milk 2 cups self-rising flour 2 Tablespoons sugar Directions: Mix first 3 ingredients. Add flour and sugar and stir until just moistened. I use a 1/4 cup dry measuring cup to ladle batter into a hot buttered skillet. If you have ever visited the south, then sooner or later you are going to see this served for breakfast. This was my sister’s recipe. She was the oldest sibling so she would make this for us from time to time. For you chocolate lovers out there, this tastes like liquid fudge on a buttered biscuit! Ingredients: 1 1/2 cup sugar 2 Tablespoons cocoa 3/4 cup milk 1 teaspoon vanilla 1 Tablespoon butter 1 Tablespoon brewed coffee Directions: Mix all ingredients in a heavy sauce pot and cook over medium heat until mixture thickens slightly.
