My family has a friend (Dave) in Canada who loves this dish.  They serve it with brown gravy and cheese curds.  I have adapted this dish to suit our southern tastes by using biscuit gravy and cheddar crumbles. 1 package steak fries 1 recipe biscuit gravy cheddar cheese crumbles Bake fries according to package directions.  When fries are nearly done, make biscuit gravy.  Make individual servings by putting fries on a plate, smother with gravy and sprinkle with cheese crumbles.  Yum! ~Marsha...

Sweet Tea

Sweet Tea is a southern tradition.  I grew up drinking sweet tea and now my grown children love it too.  When I have guests over, I like to leave the tea unsweetened and serve it with sugar substitute and simple syrup on the  side so my guests can choose. 2 large (family size) tea bags 8 cups filtered water 3/4 cup sugar In a small pot, boil 2 cups water.  Remove from heat and add tea bags, cover and let steep for 10 minutes.  Pour tea, sugar and remaining water into a one gallon container. Biscuit Gravy

Nothing screams southern like biscuits and gravy.  If you add a sliced fresh tomato, hot coffee, scrambled eggs and bacon, you’ve got yourself a down-home breakfast!   Ingredients: 1/4 cup shortening 1 teaspoon salt 1/2 teaspoon coarse ground pepper 5 Tablespoons self-rising flour 2 cups milk Directions: In a skillet (I use a cast iron skillet) melt shortening. Sprinkle in flour salt and pepper and stir with a wire whisk to prevent lumps.  Cook over medium high heat until slightly browned.  Pour in milk and reduce heat to medium.  Stir constantly until gravy has thickened.  Pour into a bowl and serve immediately.  Keep in mind that gravy will thicken slightly as it sits. ~Marsha...

Down Home Banana Pudding

People talk about “comfort food”, well this is one of the best!  This banana pudding is sweet and satisfying.  Your family will love it! For Pudding: 1 cup sugar 1/2 cup self-rising flour pinch of salt 3/cups whole milk 3 eggs 3 T. Butter 1 1/2 teaspoon vanilla 3 Bananas 2 cups Vanilla Wafer cookies For Meringue: 3 egg whites 1/4 teaspoon cream of tartar 1/2 cup sugar Directions: In a sauce pan combine sugar, flour and salt.  Gradually stir in milk.  Cook and stir mixture until thick and bubbly over medium high heat.  Once mixture is bubbly, reduce heat to medium and cook while stirring constantly for 2 more minutes.  Remove from heat. Separate eggs putting yolks in one container and whites in another.  Put egg whites in refrigerator for meringue.  Beat egg yolks slightly.  Gradually stir 1 cup of the hot pudding into the egg yolks.  Return egg mixtue to pudding while stirring.  Return pudding mixture to heat and bring to a gentle boil. Lower heat to med and cook one more time for  2 minutes longer.  Remove from heat and stir in butter and vanilla.  Strain pudding through a sieve just to be sure there are no lumps.  Pour pudding into an oven safe baking dish.  Add sliced bananas and vanilla cookies. (You can slightly crumble cookies if desired)  Stir to combine.   Set aside. To make Meringue, place egg whites in a mixing bowl.  Add 1/4 teaspoon cream of tartar and beat at highest speed with electric mixer.  When mixture becomes foamy slowly start adding the 1/2 cup sugar and continue beating until egg whites form...
Mayonnaise Rolls

Mayonnaise Rolls

These rolls are simple to make and taste wonderful!  I  like to make them for family gatherings or for company.  Everyone loves them and thinks i spent all day baking. 3 1/4 cup Self Rising Flour ( White Lily) 1/2 cup Mayonnaise 2 cups Buttermilk 1/4 cup whole milk melted butter for brushing over the top of rolls In a large bowl stir together all ingredients.  You can wisk slightly if you have any lumps but do not overmix or it will cause the rolls to be tough.  Mixture should look like cake batter.  Spoon into a cupcake pan filling each one 3/4 of the way.  Bake at 350 degrees until rolls rise and are almost done.  Brush tops with butter and return to oven to brown.  Serve hot with butter on the side if desired. ~Gina...
