Spinach and Cream Cheese Toasties

These toasties are wonderful whether you are having a party or just a craving!  They are quick and simple to make and you can refrigerate and reheat leftovers…if there are any. 4 whole wheat hoagie or 1 baguette 2 Tablespoons butter 1/2 cup chopped onion 1/2 cup chopped green or red bell pepper 1/2 cup grated zucchini squash 1/2 teaspoon salt 1/2 teaspoon garlic powder 1 box chopped frozen spinach (thawed and squeezed dry) 8 oz low fat cream cheese (softened) Cut hoagie buns in half length wise and toast in a 375 degree oven for 5-8 minutes.  Remove from oven and set aside.  In a skillet, melt butter and add onion, bell pepper, zucchini, salt and garlic powder.  Saute over medium heat until vegetables are done.  Add spinach and cook another minute, just till spinach is heated through.  Cool. In a mixing bowl, beat cream cheese until for 30 seconds, add spinach mixture and mix until just combined.  Spread spinach mixture over bread, top with cheese and bake in 350 degree oven until heated and cheese is melted.  Cut into slices if desired and serve warm. ~Marsha...

Velma’s Buttermilk Chocolate Cake

This recipe belongs to my husband’s great grandmother.  This cake has a soft texture and wonderful flavor.  I frosted it with chocolate butter cream  frosting, but it would also be good served plain with whipped topping and a sprinkle of cocoa powder. 2 cups sugar 1/2 cup cocoa 1 cup softened butter 1 cup hot water 2 cups plain flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup buttermilk 2 eggs 1 teaspoon vanilla 1 tablespoon instant coffee 2 tablespoons warm water Directions: In a mixing bowl combine sugar cocoa and butter.  Cream together scraping down bowl at least once.  Add 1 cup hot water and mix thoroughly.  In a separate bowl sift together flour, soda and salt.  Dissolve coffee in 2 Tablespoons warm water.  Add flour to cake batter alternately with buttermilk.  Pour in coffee mixture and vanilla.  Beat until smooth.  Bake in greased and floured round cake pans in 325 degree oven until done.  Frost cake as desired. ~Marsha...

Homemade Cherry Pie

There is nothing quite like the taste of a homemade pie!  It takes a little bit of doing, but it is so worth all your efforts.  This cherry pie tastes so much better than the ones you can buy in stores, and what’s great about it is I know exactly what’s in it! 5 cups fresh cherries 2/3 cup sugar 1/4 cup corn starch 1/4 teaspoon salt 1/2 teaspoon almond extract 1 1/4 cup water Double pie crust recipe Directions: Prepare pie crust recipe. Roll out and dough and place in a deep dish pie plate.  Roll out second pie crust.  You can make a lattice pie or a double crust pie, which ever you prefer.  Wash, stem and pit cherries and cut in half if desired, place in a saucepan.   Mix together sugar, salt, and corn starch, stir until combined.  Pour sugar mixture over cherries then add water and almond flavoring.  Heat stirring occasionally over medium heat until mixture comes to a boil, continue cooking until liquids have thickened.  (2-3 minutes).  Remove from heat and pour into unbaked pie shell.  Top with remaining pie crust or cut strips to make a lattice pie shell. Loosely cover with aluminum foil or use baking ring to prevent the crust from burning.  Bake in a 425 degree oven for 15 minutes.  Remove foil and turn oven down to 400 degrees and cook 20 minutes longer.  Cool completely before slicing or serving. Sour Cream and Chive Pancakes

These pancakes have great flavor.  My husband raved about them and has made me promise to make them again soon.  They go great as a side dish with any meal, not just breakfast.  You can use them like bread and make sandwiches out of them. 1 egg 2 Tablespoons butter (melted) 1 1/2 cups milk 2 cups self-rising flour 1 cup sour cream (i used the lite sour cream) 2 Tablespoons dried chives Cooking spray In a medium mixing bowl, beat egg lightly.  Mix in melted butter and milk.  Stir in sour cream and whisk until smooth.  Stir in flour and chive and stir until just combined. Spray frying pan and preheat.  Spoon batter into pan and brown until you see bubbles on top, turn over and brown the other side.  Serve immediately. ~Marsha...
Fried Green Tomatoes

Fried Green Tomatoes

4 medium green tomatoes 1 cup buttermilk 1 cup self-rising flour 1 teaspoon salt 1/2 teaspoon pepper oil for frying Wash and slice tomatoes thin.  Place slices in a shallow dish and pour buttermilk over them.  Mix flour, salt and pepper in on a plate.  Take tomatoes and dredge them in flour mixture and place in a hot skillet.  Brown on both sides over medium high heat.  You may have to turn heat down a little once the skillet gets hot.   Drain on a baking rack with pan under it.  Serve warm. ~Marsha...
